This week we want to give you some healthy ideas for breakfast.

This is such an important meal and it needs to be full of good nutrition. We will include some muffin recipes, breakfast breads, pancakes and a cake recipe.
Nothing is as good as freshly cooked treats from the oven or stove top, served warm with your favorite sides dishes of fruits or melons. This is the time of th year to enjoy this kind of treat.
Blueberry Muffin
Cream:
1/2 c. margarine
2 eggs
2 c. plain flour
1/2 c. milk
1 c. sugar
2 t. baking powder
1 and 1/2 c. blueberries (15 oz. drained)
Pour into muffin tins with paper muffin liners that have been sprayed with Pam. Sprinkle with sugar. Bake 375 for 25 to 30 minutes.
Apple Muffins
1 c. honey
1 c. oil
4 eggs
3/4 t. salt
1 t. allspice
1 t. nutmeg
2 and 1/2 c. whole wheat flour
2 t. baking powder
1 t. cinnamon
1/2 c. powdered milk
1 and 3/4 c. grated apple, including peel (2 lg. apples)
1 t. vanilla
Beat honey, oil and eggs. Mix dry ingredients. Add to honey mixture. Stir well. Add and fold together the apple and vanilla. Fill muffin tins half full and bake at 400 for 12 to 15 minutes. Remove from tins to cool.
Bran Muffins
1 c. self-rising flour
1/2 c. granulated sugar
1 t. salt
1 and 1/4 c. bran cereal
1 c. milk
1 egg
1/4 c. vegetable oil
Blend first three ingredients together. Set aside. Stir cereal and milk until moist. Let stand 5 minutes. Add flour mixture and egg and oil. Stir until just mixed. Bake at 400 for 20 minutes.
Cheese Bread
1 slightly beaten egg
1 c. Carnation milk
1/2 c. water
1/4 t. salt
3 and 3/4 c. bisquisk
1 and 1/2 c. sharp shredded cheese
Combine everything vigorously. Spoon into loaf pan. Bake at 350 for 55 minutes.
Cranberry -Nut Bread
2 c. all-purpose flour
1 t. soda
1/2 t. salt
1/4 c. sugar
1/2 c. buttermilk
1 egg, well beaten
1 c. whole-berry cranberry sauce
1 c. chopped pecans or walnuts
Combine dry ingredients, except nuts, in a mixing bowl. Add buttermilk, egg, and cranberry sauce and stir well. Stir in nuts. Spoon batter into a well greased loaf pan. Bake at 300 for 1 hour.
Banana Bread
1 and 3/4 c. flour
2/3 c. sugar
1 t. baking soda
1 t. salt
1/4 t. soda
1 /2 c. oil
1 c. mashed bananas
2 eggs slightly beaten
1/4 c. pecans
Preheat oven to 350 degrees. Grease loaf pan. In a bowl, use a fork to mix the first five ingredients. Pour in oil and stir in bananas and eggs until blended. Add pecans. Bake for 1 hour. Cool in pan on wire rack for 10 minutes.
Peanut-Butter Hotcakes
1/3 c. melted butter
1/3 c. peanut butter
2 med. eggs
1/4 t. salt
1 and 1/4 t. baking powder
1 t. sugar
1 and 1/4 c. milk
1 and 1/4 c. flour
6 slices bacon, cooked crisp, and crumbled
Beat the melted butter, peanut butter, and eggs thoroughly. Add the rest of ingredients, stirring in the bacon last. Bake as usual and serve with melted butter.
Nutty Orange Coffee Cake
3/4 cup granulated sugar
1/2 cup chopped pecans
2 teaspoons orange zest
2 (12-ounce) cans refrigerated buttermilk biscuits (10 count)
1 (8-ounce) package cream cheese
1/2 cup (1 stick) melted butter
1 cup sifted confectioners' sugar
2 tablespoons fresh orange juice
Preheat the oven to 350 degrees F.
In a small bowl, combine the granulated sugar, pecans, and zest; set aside. Separate the biscuits. Place about 3/4 teaspoon cream cheese in the center of each biscuit. Fold each biscuit in half over the cheese, pressing the edges to seal. Dip the biscuits in melted butter, then dredge in the granulated sugar mixture. Place the biscuits, curved-side down, in a single layer in the hollows of a lightly greased 12-cup bundt pan, spacing them evenly (do not stack). Place any remaining biscuits around the tube, filling any gaps. Drizzle any remaining butter over the biscuits, and sprinkle with any remaining sugar mixture. Bake for 35 to 40 minutes, until golden brown. Immediately invert the cake onto a serving platter. Combine the confectioners' sugar and orange juice, stirring well; drizzle the glaze over the warm cake. Serve warm
Delicious Pound Cake
1/3 c. orange juice
1 and 1/2 c. butter or margarine
3 c. sugar
3 c. flour
9 eggs
pinch of salt
1 t. lemon extract
1 t. vanilla
Grease two loaf pans and pour mixture in them. Bake at 325 for 1 hour and 20 minutes or until crust is brown. Delicious with coffee or hot tea.

Millionaire Pie
1 can Eagle Brand Milk
1/s cup lemon juice
1 can fruit cocktail, drained
1 cup chopped nuts
1 large container Cool Whip
1 can coconut
Combine all ingredients except Cool Whip and coconut. Pour into graham cracker crust. Use coconut and Cool Whip for topping.
