What’s cooking Suzanne?

Sometimes we just want to keep it simple when we cook.
Maybe we have had a busy day or just want to have more time to do other things.
Sometimes we just don't want to do a lot of grocery shopping that day.
There are many good recipes that don't require a lot of ingredients and do not take much time to prepare.
Maybe the recipes below will give you some ideas for preparing a simple meal.
Ham and Green Beans (a Pennsylvania Dutch recipe)
2 or 3 lbs. ham or ham bone
1 qt. green string beans
potatoes
salt and pepper to taste
Place ham in large pot and cover with water. Cook slowly for a couple of hours keeping plenty of water on the ham.
Clean and break-up the string beans, put them in with ham and cook for 25 minutes more. Add the potatoes, which have been pared and cut-up,and cook slowly until ready. Season to taste.
Chicken and Rice
3 c. instant rice
1 can Mushroom soup
1 can Chicken soup
1/2 c. water
1/4 c. butter
1 envelope Lipton onion soup mix
1 chicken
Mix rice, mushroom soup, chicken soup, water,melted butter, and half the onion soup mix. Pour into a 13x9x2 glass dish. Place chicken pieces on top of rice mixture.
Empty the other half of the onion soup mix (dry) on top of the chicken. Bake at 350 degrees for 1 hour. Yield:10 servings
Busy Day Oven Stew
2 to 3 lbs. stew meat
3 potatoes ,quartered
4 stalks celery, chopped
3 small onions, quartered
1/2 to 1 lb. carrots, sliced
3 T. soy sauce
4 T. cornstarch
2 (16 oz. ) cans tomatoes
1 c. water
Salt and pepper to taste
Place uncooked meat, carrots, onions and potatoes in a large pot. Mix tomatoes and all other ingredients.
Pour this mixture over meat and vegetables. Cover and cook in a 350 oven for 2 1/2 hours. May sir once during cooking.
Corn Beef and Gravy
1 can corned beef
1 qt. water
1/2 t. pepper
4 T. flour
1 lg. onion
1 t. salt
3 T. bacon drippings or shortening
Combine bacon grease, corned beef and chopped onion. Cook about 10 minutes, stirring, then add flour and cook 2 minutes, stirring. Add water. Serves about 8 people. Better when served hot.
Cornmeal Dumplings
1 c. cornmeal
1/4 c. all-purpose flour
1 t. baking soda
1/2 t. salt
2 eggs
1/2 c. milk
1 T. melted butter
Sift dry ingredients. Beat eggs and milk together. Stir into dry ingredients. Add melted butter.
Drop batter from spoon into pot of boiled turnip greens pot likker or heated stock.Cover tightly and cook over low hear for approximately 15 minutes.
Simple Cake
1 box Yellow Cake Mix
1 can German Chocolate Frosting
1 bunt or tube pan
Mix cake mix according to directions. Add frosting to cake mix and pour into pan.
Bake at 350 degrees for 60 minutes or until done.
