What's cooking Suzanne?

Well Valentine's Day is almost here and we have one special treat on our minds, chocolate.
Most people are thrilled to receive a gift of chocolate on this special day.
We are giving you some unique chocolate treats, some young and some old, to make and share or give to that special person or special people in your life. Included is a sugar-free coconut pie for diabetics. Happy Valentine's Day.
Chocolate Smoothie
1 c. chocolate milk
2 T. chocolate syrup
1/2 c. frozen vanilla extract
2 t. malt powder
1/2 c.frozen vanilla yogurt
1/2 c. chopped ice
Combine all ingredients together in a blender or food processor and blend until smooth. Yield 2 cups.
Chocolate Gravy
1/2 c. cocoa
1 1/2 c. sugar
3 c. water or milk
1 stick of butter
Mix ingredients together in a saucepan. Over medium heat, stirring constantly, cook until mixture is slightly thickened.
Double Decker Confetti Brownies
3/4 c. butter or margarine softened
1 c. granulated sugar
1 c. firmly packed light brown sugar
3 large eggs
1 t. vanilla
2 1/2 c. all-purpose flour
2 1/2 t. baking powder
1/2 t. salt
1/3 c. unsweetened cocoa powder
1 T. butter or margarine melted
1 c. M and M's Semi-sweet baking bits
Preheat to 350.Grease 13x9x2 inch baking pan and set aside. Cream butter and sugar and set aside. Beat in eggs and vanilla. In another bowl mix flour, baking powder and salt and blend into creamed mixture. Divide batter in half. Blend together cocoa powder and melted butter and stir into one half of the dough. Spread cocoa dough evenly into prepared baking pan. Stir remaining 1/4 cup flour and 1/2 c. M and M into remaining dough and spread evenly over cocoa dough in pan. Sprinkle with remaining 1/2 c. M and M . Bake 25 5o 30 minutes.
Suzanne's original very easy chocolate sundae syrup
2 T. margarine
1/2 c. sugar
1 t. cocoa
1 T. hot water
Melt margerine in a no stick skillet. In a cup mix sugar, cocoa, and water. Pour into margarine. Cook until boils. Pour over ice cream. Delicious
Luscious chocolate pudding
2 large eggs plus 4 yolks
1 c. sugar
6 T. unsweetened cocoa powder
5 T. cornstarch
1/4 t. salt
4 c. milk
8 oz. semi-sweet chocolate, chopped
4 T. butter
2 t. vanilla
Whipped cream (optional) for serving
Whisk eggs and yolks together. Combine sugar, cocoa, cornstarch, and salt and whisk into eggs. Set aside. Scald milk and whisk 1 cup of the scalded milk into the egg mixture until smooth and whisking slowly pour back into the hot milk in the saucepan until smooth. Place the saucepan over medium heat and cook whisking constantly until the mixture thickens and is boiling slowly. Remove from the heat and whisk in chopped chocolate, butter and vanilla. Put pudding into individual serving dishes.
Sugar -Free Coconut Cream Pie
1/2 c. Splenda
4 T. flour
3 T. Cornstarch
4 egg yolks (save egg whites)
1/2 c. flaked coconut
3 c. milk
Pie crust (cooked)
Preheat oven to 350. Mix together Splenda, flour, cornstarch, egg yolks, coconut and milk. In a saucepan , cook over medium heat until thickened, approximately 15 minutes. Stir constantly so mixture won't stick. Top with meringue.
Meringue
1/2 c. flaked coconut
Reserved egg whites
2 c. milk
3 T. Splenda
Using mixer, whip ingredients together until stiff peaks form. Spread on top of cooked pie and bake until meringue is golden brown.
Fried Apple Pies
1 quart dried apples
4 c. water
1 and 1/2 stick butter softened
1/2 c.sugar
2 T. cinnamon
2 T. cinnamon
Butter-Me-Not biscuits
Vegetable oil
Flour
In a saucepan cook water,1/2 stick butter, sugar, cinnamon and apples. Cook for 1 1/2 hours. Cool and add remaining butter. Pour into skillet. heat oil to high then turn heat to medium. Sprinkle a little flour on table top and put one biscuit out and roll it out and put apple mixture in it and fold ends together and press down edges with a fork. Place biscuit pie in hot oil an cook until brown on both sides. Do not cook on high heat. Cook slowly on medium to low heat.
Fried Chocolate Pies
Use same recipe for Fried Apple Pie, omitting the apples and water and increasing the sugar to 1 cup. Also, you will need 1/2 c. cocoa. Mix together 1/2 c. cocoa, 1 cup sugar, and 1 stick butter. Cook in saucepan until thickened. Prepare biscuits as directed for the fried apple pies. Place cocoa mixture in center of biscuit and then place a tablespoon of butter on top of cocoa mixture. Fold biscuit over an seal. Cook as directed.
