Lemon meringue pie, an unexpected new favorite

She Says

A bit of unplanned adventuring on the eve of Pi Day has brought me a new, very unexpected, favorite among the umbrella of desserts to which I give my most hearty approbation.

And yes, Pi Day (for the number 3.14, which has no true end) is not technically about p-i-e, but many have decided to consume pie in celebration of the day devoted to pi. But I digress.

Desserts were handed out while I was away from the table and I discovered the pie, which I later determined to be lemon meringue.

I’m not always thrilled with the notion of trying something new, but it looked like it might be “fluffy” and “nice,” so I decided to explore new territory and find out what lemon meringue pie is all about – something I had heard about for decades but never previously partaken of.

As it turns out, it was surprisingly nice. The lemon flavor, while present, wasn’t bitter, and the texture was soft and just right. I’ve definitely placed it on my list of desserts I would happily acquire again.
