FCT: How did you become a waitress at Catfish Haven?
SR: My dad was good friends with Wayne Sanford, and he gave me a job. I had been at Pizza Hut for six years, and I wasn't making much money there.
FCT:: What do you enjoy most about your job?
SO: People – meeting new people and talking to the regular customers. Everybody I work with is like family. and they've been here so long that everyone knows how to do everything.
FCT: What do you like to do in your spare time?
SR: I like going to church (at Mt. Hebron Baptist in Spruce Pine) and spending time with my family.
FCT: What kind of activities does your family enjoy?
SR: We like to hunt and go camping. My dad taught me how to hunt, plus my brother and husband hunt. My family likes to go camping at Slick Rock, which is out at Bear Creek Lakes. And we belong to the Bear Creek Hunting Club. My husband cleans the deer – I don't do blood-and-guts – and I put the meat up. My favorite deer meat to cook is venison jerky.
FCT: What does the restaurant do to make the catfish taste great?
SR: We always have the same cooks. Everything is made to order – when you order it, that's when they cook it. We don't cook anything ahead, and we don't own a piece of equipment to do that. People know they're going to get what they pay for.
