I'm no Rachel Ray

Last week, I was given the opportunity to appear on a cooking show broadcasted through Russellville's television station, What's Cooking Suzanne?, hosted by Suzanne Langcuster.
So I went in Monday afternoon for the taping. I must say that I was more than a little nervous. I felt a little better knowing that it was just a taping until I was told that they don't edit. The thought of messing up in front of viewers with no editing terrified me.
The irony in this whole experience is that I once had ambitions of being a broadcast journalist. I think I made the right decision by not to go into broadcasting; newspapers are safer.
In this episode, I cooked Creamy Chicken Enchiladas and Pineapple Twinkie Cake. They are both great dishes, and easy to make. I don't do anything complex. I like to make easy and delicious items, but I focus on the easy part.
During the holidays, I find myself making lavish desserts like Chocolate Peppermint Cake, and Mile High Brownie Pie. The problem with these lavish desserts is that someone has to eat them. I only eat a slice or two of anything I make. My husband, Jimmy, usually ends up eating whatever concoction I whip up. He blames my desserts for his ever-increasing waistline. But, I don't hear him complaining while he's eating it.
My recipes are never original. I tell people that I cannot cook. I only follow instructions well. I get my recipes from friends or magazines, and sometimes from the Food Network. My friend Stephanie gave me the enchilada and the Twinkie cake recipes, and they have been a hit at my house from day one.
As for the show, I had a great time doing it and hope to get another chance to whip something up, but next time, I'll have to make something chocolate.
