This is a priceless poem I found in a cookbook called "Carolina Cooking." The author is unknown.

Priceless Equipment
I marvel the praise of the present day kitchen
And all of the splendid equipment it's riching.
The mixer, the beater, the dishwasher miracle-
Who can behold them and wax less than lyrical?
Lord, do I sing them! Yet claim of them all.
The hardest gadget a man can install
In his kitchen is the one with an old fashioned look:
A lady who's willing and able to cook!
Hope you can use these recipes and that you're happy in your kitchen.
Chicken and Rice
3 c. instant rice
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1/2 c. water
1/4 c. butter
1 envelope Lipton onion soup mix
1 chicken
Mix rice, mushroom soup, chicken soup, water, melted butter, half the onion soup mix together. Pour into a 13×9" glass dish. Place chicken pieces on top of rice mixture. Empty the other half of he onion soup mix (dry) on top of the chicken. Bake at 350 for 1 hour.
Chow Chow
12 green tomatoes
12 green peppers
4 onions
1 head lettuce
2 pods of hot pepper
Chop and mix all ingredients together. Add:
2 T. sugar
1 c. sugar
1 t. celery seed
3 c. vinegar
1 t. pickling spice
1 t. mustard
Cook in a large saucepan for 30 to 45 minutes until tender. Pour into jars and seal.
Corn Casserole
1 can whole kernel corn (drained)
1 can cream style corn
1 c. milk
2 beaten eggs
1/4 c. butter or margarine
1/2 c. cornmeal
Salt and pepper to taste
Mix an pour into baking dish and bake a 350 for 50 to 55 minutes.
Carrot Apple Salad
1 lg. carrot shredded
3 c. diced apples
1/3 c. raisins
1/3 c. salad dressing or mayonnaise
1 T. lemon juice
1/8 t. salt
Combine ingredients and mix well. Very healthy!
Pineapple Marlowe
1 pkg. marshmallows
1 c. pineapple juice
2 c. sour cream
1 crumb crust
Heat first two ingredients. Chill. Whip cream and fold in marshmallow mixture. Pour into crust.
Crumb Crust
1 c. plain flour
1 stick margarine
1/2 c. nuts
1/4 c. light brown sugar
Mix ingredients, spread on baking sheet and bake at 300 for 25 to 30 minutes. Stir while cooking.
Peanut Butter Pie
2 eggs
1 c. light corn syrup
1 c. sugar
1/2 c peanut butter
1 t. vanilla
Unbaked 8 inch pie crust
Beat eggs. Mix in corn syrup, sugar, peanut butter and vanilla. Pour into unbaked piecrust. Bake at 350 for 45 to 50 minutes or until top is browned and crisp. Cool before serving.
Betty's Simple Cake
1 box yellow cake mix
1 can German Chocolate Frosting
1 bunt or tube pan
Mix cake mix according to directions. Add frosting to cake mix and pour into pan. Bake at 350 for 60 minutes or until done.
Old-fashioned Meat Loaf
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.
Oven Fried Chicken
1/2 sleeve (about 20) whole-grain salted crackers, pulsed in a food processor until fine (about 1/2 cup)
2 1/2 cups corn cereal flakes, pulsed in a food processor to fine crumbs (about 1/2 cup)
2 tablespoons sesame seeds
3/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
2 egg whites
1 cup lowfat, plain yogurt
1 tablespoon Dijon mustard
1/2 teaspoon salt
Olive oil cooking spray
4 medium sized skinless chicken breasts and 4 skinless chicken thighs, rinsed and patted dry (about 3 1/2 pounds chicken)
Preheat oven to 375 degrees F. Lightly spray a baking sheet with olive oil.
Combine the crackers and corn cereal crumbs, sesame seeds, cayenne, and garlic powder in a shallow bowl. Reserve. In a large bowl, combine egg whites, yogurt, Dijon mustard, and salt. Add the chicken pieces and coat thoroughly with the yogurt mixture.
Dip the chicken pieces in the cracker mixture. Bake for 45 to 50 minutes, or until juices run clear when chicken is pierced with a knife.
