What’s cooking Suzanne?

We hope you are in the mood to make some pies this week. I'm sure you have plenty of recipes of your own but there are a couple of pies that you might want to try.
The peanut Butter Pie and Pee Dee Watermelon Pie are two new ones for me. You may have to wait a little while to your watermelon but it sounds good doesn't it?
We have included a good tasting crust for you to try with your favorite pie fillings.
Apple Crumb Pie
5 to 7 tart peeled, cut up apples
1 (9)" uncooked pastry
1/2 c. sugar
1 t. cinnamon
1/2 c. sugar
3/4 c. plain sugar
1/3 c. butter
Arrange cut up apples in pie shell after they are rolled in 1/2 c. sugar. Mix 1/2 c. sugar with flour. Sprinkle over apples. Cut in the butter till crumbly . Sprinkle over apples. Bake 400 for 40 minutes or until done(will turn brown on top crust).
Fudge Pie
(old favorite)
1 unbaked pie shell
1 c. sugar
1/4 c.cocoa
1/4 c. flour
2 eggs
1t. vanilla(optional)
Mix by hand all ingredients and make sure eggs are stirred in well. Pour mixture into pie shell and cook at 350 until pie is done. It usually takes about 30 or 45 minutes depending on your oven. Before you take out of the oven, shake very easy and see if it is baked inside. If still juicy, put back in the oven and turn off the heat and let stay until you check and shake to see of pie is firm inside. This is delicious served with a scoop of ice cream on the side.
Peanut Butter Pie
1 (3 oz.) pkg. cream cheese
1/4 c. crunchy peanut butter
1 c. powdered sugar
1 (8oz.) Cool Whip
1 graham cracker crust
In a large mixing bowl blend together first 3 ingredients. Then fold in Cool Whip. Pour into crust and chill.
Greenville Chocolate Chess Pie
2 eggs
Pinch of salt
6 oz. evaporated milk
2 T. cocoa
1/2 stick margarine
1 1/2 c. sugar
Mix and put in unbaked shell. Bake 1 hour at 325 degrees.
Raisin Pie
9 " uncooked pie shell
4 eggs, separated
2 T. soft butter
1 1/2 c. sugar
1 c. chopped nuts
1 c. dark raisins
1 T. cider vinegar
1 t. vanilla extract
Preheat oven to 325. In a medium bowl beat egg yolks. Then beat in butter and blend. Add sugar. Beat until mixed well. In a bowl beat egg whites until foamy and add to mixture. Stir until well blended and pour into pie shell. Bake 50 minutes.
Homemade Pastry
1 1/2 c. flour
1 t. salt
2 t. sugar
1/2 c. oil
2t.milk
Mix all ingredients by hand in a medium bowl. Get out pie plate and form the mixture into a large ball and place in the middle of the pie plate. Begin to mash the dough down into the plate and form it all around the plate and press around to cover the bottom of plate. Set oven to 400 and cook until pastry is brown. If you are pouring pie filling into a unbaked shell you will not need to cook first.
I use this all the time and it makes a good pastry, and is much more economical then buying the shells.
