It’s a piece of cake

One of the nicest things you can do for someone is to bake them a cake.
You are letting them know you care for them. This is a gift that lasts for days and with each slice the fun of receiving the cake becomes fresh in your mind once again.
My relatives loved cakes. When they visited each other they always had a fresh slice of cake for you, a cup of coffee or a coca-cola.
Most of the time it was a pound cake. My Great Aunt Mary Belle make the most beautiful plain pound cake you would want. It tasted so sweet and fresh, and melted in your mouth. I always loved Aunt Mary Belle, she was with Mother when I was born.
Other cakes remind me of other relatives. Jam cake reminds me of Aunt Sue. She found a short cut to making this cake. It had a thick caramel icing that would knock you out.
My Grandmother's best cake was all of them,but the fruit cake exceeded all expectations. That taste will remain in my memory forever.
Mother's best cake was a Lane Cake, a taste of lemon, coconut and red maraschino cherries. This was combined with soft layers of white cake.
Other favorites include birthday cakes and wedding cake purchased at your favorite Deli. When they are made fresh and iced with that beautiful creamy icing they make a gathering.
So if you can't cook, or don't have time to cook cakes you know what to do, the the children love them. If you want to begin to start baking your own cakes you will need the right kind of pan and a good recipe to begin.
If you like you can start with a boxed cake and find a recipe of an icing that is not hard to make for your first try. You may want to make a simple icing.
The recipe for a creamy icing is on the side of the powdered sugar box. You will need margarine or butter and a little milk for this box cake.
Also, be sure to have fresh eggs and salad oil for your boxed cake and PAM spray for you spraying your pans of Pyrex dish.
Try baking a cake for yourself. Take your time and carefully mix the ingredients. It really isn't that hard to do, in fact, "It's a piece of cake."
