What’s cooking Suzanne?

It is a new year so we have tried to find you some new recipes this week.
Sometimes it is fun to try something new. Don't you agree?
The two soups are very warming and healthy. Be sure to try the fast Biscuit Ring Cake.
Plug up the coffee pot and share cake and coffee with your spouse or a friend. Enjoy!
Midwestern Bean Soup
1 lb. Dried Nay Beans
8 strips thick sliced Bacon
1 1/2 c. onions, finely chopped
1 1/2 c. celery, finely chopped
1 1/2 c. carrots, finely chopped
1-28 oz. can whole, Peeled Tomatoes, chopped
2 c. Chicken Broth
2 T. Parsley, finely chopped
Soak beans and cook until tender allowing water to cook down. Add salt to taste.
Pan fry bacon and set aside to drain. Crumble. To cooked beans add chicken broth, celery, carrots and onions and cook for 10-15 minutes until beans are very soft, stirring often to mash some of the beans.
Add tomatoes and simmer for 10 minutes or until desired consistency, stirring several times. Stir in crumbled bacon and garnish with parsley. Serve immediately.
Patrick's Potato Soup
Sprinkle 1 large bulb of garlic lightly with water. Trim top. Wrap in foil. Bake in 350 oven for 3 minutes. Cool 10 minutes. Squeeze out roasted garlic from bulb. Set aside. Bring 3 lb. potatoes to a boil.
Simmer for 30 minutes until very soft. Drain. Puree' potatoes and garlic until smooth. Add 4 cups chicken or vegetable stock.
Heat on low until hot. Season with salt, pepper, and 1 T. fresh thyme. Stir in 1/2 c. table cream or milk. Garnish with chopped chives.
Jalapeno Cornbread
3 eggs
2 1/2 c. milk
1/2 c. oil
3 T. sugar
1 3. Cornmeal
1 can cream corn
1 1/2 c. grated cheese
1 can jalapeno peppers
1 large onion, chopped
Mix all ingredients well and bake at 450 for about 1 hour in a well greased pan.
Chili Tomato Macaroni
Brown 1 pound hamburger and drain fat. Add 1 c. water and 1 c. uncooked macaroni, 1-16 oz. can chopped tomatoes, 1 T. chili powder and 1/2 c. seasoning mix. Simmer covered for 20 minutes or until macaroni is tender.
1 1/4 t. black pepper
1 T. garlic powder
2 T. dried parsley
1/2 T. onion powder
1 T. salt
1 2/3 c. nonfat dry milk powder
3 1/2 T. beef bouillon granules
1/3 c. instant onion
Mix all ingredients together and store for other use.
Georgia Cake
1 box Duncan Hines Cake mix (white pudding mix)
1 can mandarin orange, with juice
1/2 c. oil
4 eggs, whole
Mix and bake at 350 for 20 to 25 minutes. Cool and ice.
Icing
1 lg. can crushed pineapple
1 box vanilla instant pudding mix
1/2 c. chopped pecans
1 lg. Cool Whip
Fold other ingredients into Cool Whip. Ice layers and top. Refrigerate.
Biscuit Ring Cake
1 small pkg. cream cheese
2-10 oz. can Hungry Jack Refrigerator Biscuits
1/2 c. melted oleo
3/4 c. sugar
Grated rind of 1 orange
1/4 c. chopped nuts
Cut cream cheese into 20 pieces.
Separate layers of each biscuit and insert square of cream cheese and then press edges back together. Dip into melted oleo and then into mixture of sugar, orange rind, and nuts.
Place on edge of bundt pan, which has been greased with oleo. Bake at 350 degrees for 30 to 35 minutes.
Invert pan over serving plate immediately.
Good warm or cold.
