What’s cooking Suzanne?

We hope your holidays were happy ones.
Even though some of us may have overeaten these holidays we still have to consider foods for the new year.
We have tried to send you some healthy selections. Consider the foods that can help you be healthy this year.
Fruits and vegetables are good choices with whole grain included.
Pinto Bean Casserole
1 lb. ground turkey or ground beef
1/2 c. chopped onion
1/2 bell pepper chopped
3 c. pinto beans
1 (24 oz.) can stewed tomatoes
1 c. mozzarella (skim) cheese
1 c. self-rising corn meal
1 c. skim milk
Preheat oven to 400. Saut/ turkey or beef, peppers, and onions together. Place in prepared casserole. Layer beans, then stewed tomatoes, then cheese.
Mix the corn meal and milk and pour on top. Bake at 400 until brown on top. Serves 8
Vegetable Casserole
1 lg. pkg. frozen mixed vegetables
1 roll garlic
1 can condensed cream of mushroom soup
1 can water chestnuts
2 cans of asparagus spears, drained
1 pkg. sliced almonds
Bread crumbs
Cook vegetables according to directions on package.
Mix hot vegetables that have been drained with garlic cheese. Stir until cheese melts.
Stir in mushroom soup and water chestnuts. Pour into 13x9x2 inches casserole dish.
Lay asparagus on top. Sprinkle with almonds. Top with breadcrumbs. Bake at 350 for 20 minutes or until casserole bubbles.
Texas Burgers
1 1/4 lbs. hamburger meat
1 lg. onion, chopped
1 green or red pepper, chopped
3/4 c. ketchup
2 T. mustard
salt and pepper to taste
2 T. sugar
1 T. vinegar
Mix hamburger, onion, and bell pepper in a skillet. Cook until browned. Drain off fat. Add the ketchup, mustard, salt and pepper, sugar, and vinegar.
Mix well and simmer for 30 minutes. Serve on hamburger buns with slaw.
Potato Chip Cookies
1 lb. margarine
1 c. sugar
3 1/2 c. flour
1 c. crushed potato chips
2 t. vanilla
Combine margarine and sugar and cream together. Add flour and potato chips, and vanilla.
Drop from teaspoon on greased cookie sheet. Bake at 350 for 15 minutes. Makes 76 cookies.
Lemon Chess Pie
5 egg yolks
1 T. flour
1 T. corn meal
2 c. sugar
1 c. milk
1 stick butter
1 scant t. lemon extract
9 inch pie shell
Beat egg yolk adding flour and meal.
Beat well alternately adding sugar, milk and butter, and extract. Bake one hour a 350.
