A New Year is beginning. It is hard to believe it is 2010.
With Christmas left overs still in the refrigerator that is it you didn't eat it all up, we still want to fine some recipes for the beginning of a new year.
Maybe the recipes today can help you out as you plan for your New Year good luck meal.
Cheese Ball
12 oz. sharp cheddar cheese, grated and softened
3 oz. cream cheese, softened
1/8 t. garlic powder
2 t. Worcestershire Sauce
1/2 c. finely chopped pecans or 2 T. chili powder
Blend grated cheddar cheese with cream cheese. Add seasoning and sharp into a ball. When firm, roll in chopped pecans or chili powder. Wrap in plastic wrap and place in a container and refrigerate. Serve with your choice of crackers.
Corn Bread Supreme
1 c. self-rising meal
1/2 c. Wesson Oil
1 small can cream-style corn
1 c. sour cream
2 eggs, beaten
Combine all ingredients and place in baking pan. Bake in 415-degree oven until done, approximately 25 minutes.
Black eyed Peas and Pork
1 medium sized bag of dry black eyed peas
1 piece of white pork meat of salt pork about 1 cup full
Soak beans overnight. The next day drain and put in a pot. Cover with water. Add salt pork and season with salt and pepper to taste. Cook until peas are done but not overcooked, you will need to cook the water down in the peas.
Homemade cornbread
2 c. self-rising corn meal
1/3 c. flour
add a little oil to this
Stir in enough milk to make a batter. Pour in a bacon greased iron skillet and bake at 425 until brown. Great with fried potatoes.
Cole Slaw
1 (16 oz.) pkg. slaw mix
1 lg. red apple, cored and chopped, not peeled
1 c. raisins
1/2 c. light mayonnaise
2-3 pkts. Splenda sweetener
Combine slaw mix, raisins, and apples in salad bowl. combine mayonnaise and sweetener.
Stir mayonnaise mix into slaw. Cover ad refrigerate.
This is so easy to do and is really tasty. Suitable for dieters or diabetics, or for folks who just want to cut down a few calories.
Banana Pudding
2 c. milk
3 T. flour
3 eggs yolks
1 c. sugar
1 1/2t. vanilla
Vanilla wafers
Bananas
3 egg whites
Cook first 4 ingredients together until thick. Add vanilla flavoring.
Thin to right consistency if too thick, with milk. Layer 1 thin layer vanilla wafers, then 1 layer bananas.
Pour a layer of pudding, then 1 layer of wafers, and rest of pudding. Make meringue topping of whites and brown in oven.
