The big times ahead

A very exciting week is ahead of us.
Holy Week is a time of reflection and a time to enjoy gathering with family and friends.
As we plan our meals we might want to include the beautiful colors of Spring, boiled colored eggs, pastel jello salads, green colored vegetable casseroles, sweet carrots and ham.
This is also a great time to use baskets you have collected through the years for serving casseroles, breads, homemade cookies and candies.
Cookies iced with jelly beans are a favorite for Easter colors and taste.
Assorted candies are a must for the youngsters and the young at heart. Bright fruit salads dress up your Easter table and any cake that carries out the Easter theme is a must.
There is a rabbit cake recipe that we have used on Easter that makes a good tasting cake and is easy to make. You can find it on the recipe page this week.
Plan a colorful table setting with pastel tablecloths if you have one. A white one will also work fine. Easter napkins add a cheerful addition to the table. Use a blooming potted plant and add some Easter decorations to it.
You may want to decorate your table with Easter baskets adorned with colored eggs, bright ribbon and colorful bows. Use greenery from your yard to fill your Easter basket. Lay the colored egg in the greenery and scatter some Easter candy about the basket.
Be creative!
One of the problems I have when cooking for a larger groups is that I cook too much.
Lately, we have cut back on the number of dishes we prepare. One main meat dish, a couple of vegetables, maybe a relish dish, a salad, bread and two different deserts.
By doing this you will have more time with your company. Try to cook ahead if you can and refrigerate. It also means a lot less clean up for you.
There is a good ham we buy for holiday now. It is a Sugar Time spiral sliced ham. Fully cooked, it is delicious and easy to serve for company. We just purchased ours at a local grocery store this week. This is also a good ham to use to make sandwiches when someone needs a snack or light meal.
